It'll run off anything from dc to white noise as long as the rms voltage is somewhere near 240V! (Possibly the switches/energy regulators would be unhappy on dc or high frequency ac, though.)

It will be used off grid and a pure sine wave inverter over 3kw is much more expensive than modified sine wave inverter of the same capacity, the electricity will be from a hydroelectric generator with a floating buffer battery bank, so plentiful, I would expect a heater elements to take anything as you said but I am worried about the simmerstats as the contacts maybe eroded by the modified sine wave, as DC arcs more than AC and this would be halfway between?

Cool, it also says there's an optional DC model! Could it have been on sale late 50s and still on sale in 62? They really packed a lot of food into it for the advert!

In the 1960s I think there was a mix of 13 5 and 15 amp sockets? I don't think you would work too well off a 5 amp socket!

I am also interested, it probably just had more heavy-duty electrical contacts in the switches and simmerstats, I would think a DC model would work fine on AC? Any one know?

A modified sine wave inverter should be fine. The important point is not the shape of the waveform but the fact that the voltage and current drop to zero twice each mains cycle, thereby helping to extinguish any arc.

I have the original 51H Twin baby belling cooker instructions and recipes booklet that came with the cooker and bought the belling cookery book 1955 from ebay.

The books are really cool, they cover everything from basic cooker maintenance to best kitchen practice and even burns and scalds, not to mention how to prepare the food!

Also the 51H booklet said suitable for eather 13 amp or 15 amp three pin plug, so that settles that, and my cooker is the AC model, I looked and the badge on the back closely.
