I've used a microchip 23LCV512 (SPI interface SRAM) as a big serial receive buffer on a recent (non PIC) project. Although a current part, it is happy to run on either 3V3 or more importantly for our usual purposes, 5V.

It can be accessed at speeds approaching 20MHz so in theory you can always stuff a received byte into it in less time than it takes to fully receive the next serial byte even at fairly high baud rates.
